Vinification : Cooling of the harvest, skin maceration for 4 days at low temperature, then controlled fermentation.
The winemaker’s note
You can imagine a big table of friends, sausages from Arles, beautiful grilled entrecote. The meat is tender and tasty. We enjoy this red wine, so we take some cheese to finish the bottle. Or, just the two of us, at the end of the day, we share a glass (or the bottle) while watching the sea.
